Cut chicken skin into uniform pieces. Lay skin flat and lightly dust with spices, either cracked cumin seed, celery seed, coriander or mustard seed. Secure edges under over-safe bowls so it remains flat during cooking. 

Bake 20–30 minutes at 275–300°. Sprinkle with flaky sea salt while still hot.
